Ok Ok I need to know, why are breakfast tacos are not more of a thing? I mean really, tacos are great in general and breakfast burritos are obviously amazing, but breakfast tacos? Come on this needs to be more of a thing! ANYWHO...here at Wild Buff we love breakfast tacos and when I see them on a menu I will always order. When we have guest over, a breakfast taco bar at home is so much fun as it is delicious!

This is a super easy to make recipe that family and friends will love. We kept this super simple - but feel free to get creative but don't forget about the WILD GREEN HOT TABLE SAUCE!
4 - Eggs, beaten
3-4 oz – Sausage/Chorizo/ Bacon - Yum Bacon
1/2 - Medium onion
1 Tsp of Wild Green Jalapeno Green
pico de gallo
Flour or corn tortillas
- 1. Heat a skillet to medium-high heat and add the meat. Break it up into very small pieces so that it spreads even in the Tacos
- 2. Add the chopped onions and cook with the meat. If your meat doesn't have as much fat in it, you may need to add a tsp or two of oil.
- 3. Add the eggs, and the Jalapeno Green and stir continuously until the eggs have just set and are no longer wet. Remove from heat.
- 4. On cast iron skillet heat your corn or flour tortillas. Fill them with your eggs and dash on if you need more heat.
Top with fresh pico de gallo and a squeeze of lime --- ENJOY!
