This is a tasty vegetarian WILD take on buffalo wings, we use an air fried over but you can be roasted in an oven for a healthier alternative to deep fry. The cauliflower with our WILD RED or GREEN Hot Table Sauce is an irresistible coating that can be shared with friends and family (or just you!). It’s the perfect appetizer or fun side dish!
Typically what you find trending in restaurant buffalo cauliflower is deep fried, however at home we wanted to make homemade WILD GREEN cauliflower in the air fryer.

Ingredients
For Cauliflower
1 large head cauliflower (about 2½ pounds), cut into medium and large florets (about 8 cups)
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
FOR THE WILD SAUCE:
4 tablespoons unsalted butter
⅓ cup Wild Green (RED or GREEN) hot table sauce
Directions
Heat air fryer or oven to 400 degrees.
In a large bowl, toss the cauliflower with the oil to evenly coat, then season with salt and pepper. Spread out the cauliflower in even layer. Air Fry the cauliflower shake occasionally, until just tender, about 15 minutes or desired doneness.
As cauliflower roasts, make the sauce: Melt the butter with the hot sauce in a medium saucepan over low heat, and stir to combine. Season to taste with salt and pepper. Once melted, turn off the heat, but keep the saucepan on the stove.
Stir together all the ingredients in a small bowl. Season to taste with salt and pepper, and set aside.
Pull the cauliflower out of the air fryer. Transfer the cauliflower to the Wild Green Hot Table Sauce-butter mixture, stirring the cauliflower to fully coat with the sauce. Then, using a slotted spoon, transfer the cauliflower back to the air fryer in an even layer.
Air Fry the cauliflower for about 5 minutes. (Depending on your air fryer, you may need to shake the pan after 2 or 3 minutes for even cooking.) Serve with ranch or blue cheese dressing for dipping or drizzling, if desired.
